INGREDIENTS
- 3 cup cooked chicken, shredded
- 1⁄2 cup dried, sweetened cranberries
- 3⁄4 cup chopped celery
- 1/4 cup pumpkin seeds
- 1⁄2 cup mayonnaise (or more, to taste)
- Salt, optional
- White pepper, optional
- 1 teaspoon fresh parsley, chopped
- 4 Romaine lettuce leaves
In a large bowl combine chicken, cranberries, pumpkin seeds, and celery. Stir to combine..
Add mayonnaise, salt, and white pepper and mix well.
Place lettuce on a plate. Layer with a spoonful of chicken mixture, sprinkle with a pinch of fresh parsley.
Roll wrap, cut and enjoy.
May also be served on a bed of lettuce or spinach instead of in a roll.
